9 fresh medjool dates - stones removed
1/2 cup pepitas
1/2 cup sunflower seeds
1 tbsp virgin coconut oil
1 tsp cinnamon
1/2 cup dessicated coconut - optional.
Finely chop carrot in the food processor.
Add remaning ingredients and blitz until a smooth consistancy is formed.
Roll mixture into small balls and coat with coconut if desired.
Store in the fridge.
